Q1. What is your Name?

Q3. Where are you located in the world?

Q4. What is your favourite Summer drink and why?

At the moment its a close call between our No.7 Breakfast blend or our No. 13 Sencha Green. The No.07 is blended by us and strikes just the right balance between strength and flavour, a staple always present tea for that early morning brew that brings us out of our post sleep haze. But just as good is the No.13 which is a light refreshing green with a touch of grassy sweetness.

Q5. What is the perfect Summer’s day setting to enjoy the drink?

Sharing a pot sat in the garden. The breakfast blend works particularly well first thing but both teas can be enjoyed throughout the day.

Q6. Is there a right or wrong way to prepare the drink? i.e. Never drink without ice?

The No.07 is pretty simple really 3 heaped teaspoons for approx 750ml water just off the boil, infused for 4-5 mins with a dash of milk. The green works with approx the same measures but the water needs to be left to cool after boiling for approx 4-5 mins this will bring the temperature down to somewhere between 75-80 degrees infuse the leaves for 2-4 minutes and serve without milk. If you require a stronger or weaker cup adjust the amount of tea you use not the infusion time. A longer infusion time will bring out more of the bitter tasting polyphenols which turn a lot of people off green tea. Quality loose leaf green tea prepared correctly isn’t bitter, it’s delicious.

Q7. Is the presentation of the drink important? i.e. ceremony, type of glass, setting.

We think so. We use a glass teapot so we can see what’s going on inside, and we drink from white ceramic cups not mugs. We feel it is important for the vessel you drink your tea in to be simple yet elegant in design this allows the tea to shine.

Q8. Is there a Summer’s day drink that you feel is underrated? If so, why?

A lot of tea in the UK is underrated, especially green tea. We are indeed a nation of tea drinkers but unfortunately the large majority of people still drink mediocre tea in tea bags, which they prepare incorrectly. We are trying to educate our customers about tea selection and preparation to best enable them to have the tea experience they deserve.
