Q4. What is your favourite Autumn drink and why?
It’s the later harvests of the year and in Japan that means Bancha! An older, thicker, and more coarse leaf gives way to a rich sweetness and a slight nuttiness. Sometimes the high-end stuff can take a back seat.
Q5. What is the perfect Autumn day setting to enjoy the drink?
With the leaves in full colour I recommend greeting the sunlight in the morning. Start the day of right by gifting your eyes and mouth with sights and flavors.
Q6. What contributes to receiving a high quality drink?
Such a broad question as different teas have their own way of defining themselves. Pick a tea that is within the harvest season. Go with a reputable brand or one that offers transparency. Study the way to prepare the tea by reading and research. Do not rely on price to dictate quality; leave that to your senses. Only receive tea from a gracious and caring host. I think that sums things up nicely.
Q7. What drink do you start your day with and why?
Often a Sencha or a Black tea. I’m typically only getting 2-3 brews out of the leaf. Let’s met get moving and allows me to enjoy the morning.
Q8. Do you order a different drink whilst travelling?
If I’m travelling I’ll stick with the local drinks. Things are better when they’re close to home.
