Q4. What is your favourite Autumn drink and why?
I’ve been drinking too much oolong recently. Particularly Hanhakoucha which is a lowly oxidized oolong tea from Japan. Why do I like it? Because it’ very rich in aroma and flavor and very smooth to drink. It reminds me Taiwanese oolongs and it’s got some sort of sencha feeling in it.
Q5. What is the perfect Autumn day setting to enjoy the drink?
Since the weather’s been getting cold here in Istanbul that would be indoors with my family. I try to go for Gong Fu Cha as much as possible as I get more out of tea brewing. Recently I bought a Shiboridashi made by Petr Novak at Caj Chai Tea House in Barcelona and it’s become my favorite brewing vessel since. I must say it’s doubled our joy!
Q6. What contributes to receiving a high quality drink?
High quality tea is very limited and hard to get by. It’s better avoid middlemen and to get tea from its source as much as possible. Getting high quality tea does not give you much joy unless you brew your tea right! I suggest everyone to go for Gong Fu Cha whenever they have the chance because, in my experience, there’s no better way to enjoy tea. In other words avoid western style brewing!
Q7. What drink do you start your day with and why?
That’s Tieguanyin recently! I have it even before I have my breakfast. It wakes me up very well. Moreover it does not bother my stomach at all! It’s a sweet tea with floral and fruity notes and almost no bitterness in it.
Q8. Do you order a different drink whilst travelling?
I generally settle for mediocre teas when I travel. Because It’s hard to brew good quality tea on the road; you can easily waste it. I generally stop by at Starbucks to quench my thirst. That’s said I always look for nice tea houses wherever I go. My recent discovery is Caj Chai Tea House in Barcelona.
